Shepard avocados are a new season variety, typically arriving from March onwards when Queensland farms begin harvesting. That is the time to look for them.
Look for Shepard avocados that give slightly to gentle pressure at the top. Unlike the Hass, the skin stays green when ripe, so colour is not a ripeness guide. If still firm, leave on the bench for a day or two. Avoid any that feel very soft or mushy.
Slice through a salad, fan over toast, fold into a grain bowl, or use in sushi and rice paper rolls where keeping its colour and clean texture makes all the difference.
