Zucchini Flowers 200g

Zucchini Flowers 200g

One of the most fleeting and celebrated ingredients of the Australian summer. Zucchini flowers appear briefly from November through March and disappear before most people realise they were there. When you see them on the shelf, buy them. They will not wait and neither should you.

Vibrant orange and yellow, impossibly delicate and with a mild sweet flavour that needs very little to shine. These are an ingredient that rewards the cook who treats them with respect.

Stuff the blossoms gently with a mixture of ricotta, lemon zest and fresh herbs then dip in a light batter and fry until crisp and golden for one of the great Italian summer preparations. Lay them over a pizza or flatbread in the last minutes of baking, fold through a risotto where the colour and flavour add a genuine moment of beauty, or toss raw through a salad where the petals add colour and a delicate squash flavour.

Use them the day you buy them or the next day at the very latest. Look for petals that are vibrant orange to yellow with no browning at the edges. A fresh zucchini flower looks almost impossibly bright on the shelf. That brightness is your signal.
