One of the most flavourful salad leaves in the shop and one of the most underused. Watercress has a clean peppery bite that sets it apart from milder greens and makes it genuinely interesting to cook with and eat.

At its best in the cooler months from April through August when cool growing conditions bring out a sharp vibrant flavour that warmer months cannot match. Available year-round but autumn and winter watercress is the one worth seeking out.

Toss through a salad with pear, toasted walnuts and a sharp dressing where the pepper cuts beautifully through the sweetness, wilt briefly into a pasta or stir fry, blend into a vivid green soup with potato and a little cream, or use as a bed for grilled fish or steak where the heat of the protein wilts the leaves just enough. It crosses from raw to cooked with ease.

Look for firm upright stems with dark vibrant green leaves and no yellowing or wilting. A fresh bunch smells clean and peppery. That fragrance is your quality signal.
