Look for figs that are plump and heavy, yielding gently to pressure, with smooth skin and no split or leaking flesh. A split fig is not necessarily past its prime, but eat it the same day. Avoid any that smell fermented or feel very mushy. Figs do not keep long, so buy only what you will eat within a day or two.
Eat them fresh halved with a little honey and goats cheese, wrap with prosciutto, slice onto a cheese board, roast briefly with balsamic and thyme, or fold through a salad with rocket and walnuts.
